Bland Stir Fry



This just came out very... okay.  You know where you make dinner, and it's edible, but definitely nothing you'd post on your blog.  Not tasty enough to fall in the good category, not bad enough to fall in the amusing failures category, just kind of... okay.  

To explain myself, I'm trying to clear all pictures off my computer.  I recently quit one job and am starting another one on Monday.  The job switch comes with a computer switch, and I want to transition as little as possible from one computer to the next.  So in the interim this is the sort of salivation worthy recipes I'll be posting.  Actually for this post no recipe, but a picture of ingredients:

Boston Cream Pie- Better than Yoplait's Version















I'll admit it, I just wanted to make this recipe because I watched this video and it looked delicious!  I'd never actually eaten boston cream pie, only boston cream pie flavored yogurt.  Unsuprisingly, the version that is not 100 calories a serving tastes a thousand times better!  This was a very fun cake to make.  I've found that pastry cream is more forgiving than you would think!  It even worked out for me, and the straining step ensures even if you get some eggs scrambled in the baking process, you'll still have a nice smooth filling.  The only thing I would do different is take this out of the fridge earlier before I want to serve it.  I took it out about an hour before and the cake was too cold for everyone to get the full flavor of it. 

P.S. This recipe is even easier if you use cake mix as the video suggested.  I didn't have any so I just used this recipe I found from googling.

Yes, it happened again.  I attempted an overly ambitious (for me, not for you) recipe and ended up with my all too frequent question:

What can I do with this screwed up dish so I don't throw a temper tantrum that it didn't work out?

The answer in this case was a parfait.

5 Minute Cookies- Snickerdoodles

 

Snickerdoodle (roughly translated from it's German roots Snicherdischen) reads as a cookie recipe so easy you could make it with the use of only one hand, while black out drunk, and with a serious inner ear problem.  If a cookie takes me 5 minutes to whip together, I'm assuming it'll take you about 90 seconds.  Seriously though, these cookies come together super fast, I'd say the most time consuming part of this recipe is waiting for the oven to preheat.  I'm not entirely sure where I got this recipe, but I think it came from my mother in law.


Look at those little crackle lines!  You want to make these.  Preheat, measure, mix, roll and you're done.

Easy Dinner Side- Beans and Veggies


I know this isn't the most exciting post title, but give it a shot!  This is really, really tasty.  I think I'm slowly starting to learn that any recipe that starts with onion, carrots, celery, and garlic turns out pretty well.  My husband says this is all about layering flavors, and I'm slowly trying to get the concept.  I made this, then ran to the fridge to figure out what to put on top of it and found some spicy Italian chicken sausages.  Perfect!  Top with anything, make a soup, or eat it by the bowlful, this is great.  I got this from a great blog called Food Wishes where all of the recipes have videos, I just took out a few steps, but I promise it's still amazing!

Easy As... 3 Step Blueberry Pie

 
To make this pie you need to be able to do three steps.  Bake a pre-made pie crust (one made from crushed cookies), mix some ingredients together, and pour said ingredients in to pre-made pie crust.  If you're lucky enough to have kids I think this would be a great recipe to make with them, especially since you don't really even need to bake the cookie crust, they're pretty much fine as is.  If you aren't lucky enough to have kids and you've just had a recent string of bad luck with trying to cook/bake (me!) this is also a good recipe to try.  Recipe from here.

Cucumber Juice... Err... Cucumber Popsicles

I had a couple of extra cucumbers laying around, when I came across this recipe.  I ended up with juice that was much too sweet for my original intentions, which may or may not have involved vodka, so I came up with a back up plan of using the juice to make popsicles.  I also learned for about the millionth time that you should taste before adding the full recommended amount of an ingredient.  Someday I'll remember... In the meantime, make some popsicles!  If you don't have little molds like I used you could just use little dixie cups with a plastic utensil or whatever stuck in them.  Peel the cup off and you'll be set.
